Mountain overlooking Henrieville on way back from Escalante
Had a relaxed morning sorting out all our stuff (Mike) and starting the dehydrating process (Jax). Decided to experiment and make a chicken Mexican dish with tinned chicken. Turned out this was really good to dry so hopefully it will reconstitute nicely. Also used tortilla flour as a thickening agent which gives it a Mexican twist.

As the weather was not so great went for a 30 mile drive along scenic highway 12 to Escalante. Again another super drive with a steep and windy ascent to a spectacular look out. The drive down to Escalante was a complete change of terrain with the road winding through a broad valley with steep cliffs either side.
Stopped in Escalante for a coffee and carrot cake before heading back to Cannonville and a nice salmon dinner and bottle of wine. All in all felt this was a good relaxing holiday day.
